I am celebrating one year of my blog 🙂 Can’t believe it!! I have really enjoyed posting gluten free recipes and I hope you have enjoyed seeing them! I decided a fun thing to do and something new for my second year would be to have guest recipes from family and friends!
So- this first one is from my sister Jill! These were really good and really easy to make gluten free, we just needed to use a corn tortilla instead of a wheat or flour tortilla.
Veggie Tortillas
These are so yummy and so easy and healthy! You can use whatever veggies you like. We used chopped up broccoli, cauliflower, mushrooms and black olives. Put a little layer of shredded mozzarella cheese on the bottom of a gluten free tortilla. Put all of the raw veggies on top of the cheese. Add a bit of salsa and shredded colby jack cheese along with a bit more mozzarella on top.
Pop in the microwave for about 2 minutes and 45 seconds. These turn out juicy and tasty!
