I picked up my Mom and Dad from the airport and wanted to make them a fun, yummy lunch before they headed home.  So this is what I came up with!  Really yummy and fun!  My Mom really enjoyed lunch which made me happy 🙂  So did my sister and Dad- yeah!  Of course My Little Gluten Free Girl ate hers up because she loves anything to do with tacos 🙂

Fiesta Taco Salads

Make your favorite taco meat.  I brown one pound of hamburger in a skillet with a few pinches of salt and cumin.  I add in 1 cup of salsa and a few splashes of water after the meat is no longer pink, bring it to a boil and then simmer until the liquid has evaporated.

I used these fun flat bottom taco shells which were a hit.  Put them on a baking sheet in the oven at 350 for about 6 or 7 minutes to get them crispy.  They are fun to eat and really filling.

Just put the taco meat on the shell, put on your favorite toppings.

I put out salsa, shredded taco cheese, sliced avocados, chopped black olives, chopped tomatoes and cilantro sour cream for people to choose from.

For the sour cream, I just chopped up some fresh cilantro and put it in a bowl with 2 cups of sour cream and mixed together, really adds a nice flavor to the taco salads!  YUM!
