Oh my gosh this is my new favorite thing!  This was so fun and so yummy that I can’t stop eating it!  It was my turn to host our monthly sisters lunch and this was what I decided to make for our appetizer/salad.  It was a hands on foodie experience for my sisters and I and of course My Little Gluten Free Girl as we built them together!

Greek Salad Towers


These are so fun to make!  I cut up all of the veggies and put them all out on a platter to make it fun and easy to assemble the towers!


First I cut up a cucumber in oval slices, cut up big round slices of tomato and cut up an orange bell pepper, yellow bell pepper and a red bell pepper into circles.  I chopped up a handful of kalamata olives as well.

I layed these all out on a nice big platter.  I also put out some olive oil, a bowl of feta cheese and a bowl of greek dressing that I bought.  My Little Gluten Free girl helped with all of this!  She really was a good chef with me in the kitchen and she loves this salad tower.  In fact, we had one the next day with the leftovers 😉


To start the salad tower everyone took a piece of french bread that I cut and put out on a plate.  So, start with a piece of french bread then drizzle with olive oil.  Lay a piece of tomato on top of the bread and sprinkle a little sea salt on the tomato.  Lay two pieces of cucumber on top of the tomato and drizzle with a few splashes of the greek dressing.  


Place a bell pepper on top of the cucumber and top off with another tomato.  Sprinkle with a little more greek dressing and olive oil.  Finish with kalamata olives and feta cheese sprinkled on top.

When ready to eat, you can just cut it with a knife and it will all fall together on the plate.  Eat it like a salad with a knife and fork!  Gluten Free and Yummy 🙂


What a fun sisters lunch.  This was a true sisters lunch because all four of us were there, my sister who lives farther away drove here for our monthly sisters lunch which was wonderful!
