I could make so many dishes with zucchini and we love them all!  The filling for this dish My Little Gluten Free Girl ate up!  I created this dish with what I had on hand and it turned out so good!  You could just eat the filling by itself 🙂

Sausage Stuffed Zucchini

First, I scooped out the seeds and a little bit of flesh of the zucchini.

Put them skin side out on a baking sheet and drizzle with olive oil and a pinch of salt and pepper on the skin and bake for about 8 minutes at 400 degrees.

Meanwhile, I just browned one pound of sausage in a skillet along with 1/2 of a chopped white onion.  I also used the flesh that I scooped out, chopped it up and threw it in with the sausage and onions. Cook the sausage first for a little bit and then add the onions and then add the zucchini along with a pinch of salt.

I also added in one can of diced tomatoes at the end without the liquid.

Scoop the mixture into each zucchini and sprinkle with a sprinkle of mozzarella cheese and bake for about 10 minutes at 400 degrees.
