This is really tasty and so simple to put together for a quick lunch or snack!

Stuffed Avocado Salad


Cut one avocado in half carefully removing the seed/pit and scoop out each half of the avocado and set aside.


To make the tomato salad mixture cut in half about 10 cherry or grape tomatoes and put in a bowl.  Sprinkle about 1/2 cup of feta cheese in with the tomatoes.  Add in a pinch of chopped fresh cilantro and a pinch of sea salt.  Mix together well.  I used a really nice roasted onion and cilantro infused olive oil but regular olive oil would be just fine, use about 1 tablespoon or so.  You could also add in a handful of chopped red or white onions.  Add in a few dried herbs if you wish such as a pinch of dried oregano or parsley.


Layer the tomato salad over half of an avocado and enjoy 🙂
