These were so fun to make with My Little Gluten Free Girl and we loved eating them for a late breakfast on a lovely November morning.  My husband finished them off the next morning for his breakfast.

Ham and Egg Cupcakes


First, put one piece of gluten free deli ham into the bottom of a muffin tin.  We had pretty big pieces so we cut them in half and put just half of a piece, so it depends on how big your pieces of ham are.


Sprinkle a little cheddar cheese on the bottom and add in little pieces of broccoli.  You can use fresh or frozen.  We used frozen and it worked great!  Make sure to chop up the broccoli into smaller pieces.

Crack about 5 eggs into a bowl and add in about 1/2 cup of milk along with a few pinches of salt.  Whisk that up and pour over all of the ingredients.

My Little Gluten Free Girl was such a good helper pouring the egg mixture!


Bake in the oven at 375 for about 18-22 minutes.
