This is a new favorite when my husband gets home late from work on these cold January nights.  A yummy egg sandwich is perfect and this is a fun way to eat one~

I remember my Dad eating fried egg sandwiches and he would play the drums with the knife and the toaster while he waited for the bread to toast 🙂  What a fun memory!  My Dad still eats these today but not the fancy way with the egg in the hole.  Just a good old fashioned fried egg sandwich is what he likes, here is just a little twist on that 🙂

First, just take a large piece of bread.  If you don’t have a large piece, a regular piece will work just fine but the bigger pieces make it a little easier.  I used a lid of a mason jar to cut out the circle.  If you want a smaller circle you could just trace one out with a knife to make it the size you need.

Put a few tablespoons of butter in a skillet and let that melt a little before putting in 1 tablespoon of garlic olive oil, this really adds nice flavor.  You can certainly use regular olive oil if you prefer.  The butter and olive oil is a nice combination for the bread to toast up!

Put the pieces of bread in the skillet and let those brown a little, just 2 minutes or so.

Crack an egg into each hole and let the whites set.  Add a pinch of salt and dried basil.  I like to put a lid on it for a few minutes to help the eggs set and then I turn the bread over for a few more minutes.  This just depends on how you like your eggs done.  Add in the circles of cut out bread and toast those up for a few minutes on both sides, they are really yummy to eat too!
