These lettuce wraps are great to put together quickly for a healthy lunch or dinner!

Asian Chicken Lettuce Wraps

I used store bought rotisserie chicken for this which makes it so much easier!

Shred the chicken and put the amount that you need into a skillet just to warm it up a bit.  Add a few pinches of salt.  Take it off the heat and add in about 2 tablespoons of hoisin sauce to the chicken and mix well.

Meanwhile, chop up 1/2 cup of orange bell pepper, 1/2 cup of cucumber and 1/2 cup of celery.

Mix the chicken together with the vegetable mixture, finish with a little sea salt.

Take some nice pieces of lettuce, we used big leaves of romaine lettuce.

Scoop the mixture into a leaf of lettuce and enjoy!
