Oh my gosh these were so good!  Such a perfect lunch for My Little Gluten Free Girl and I 🙂  I am going to admit that they tasted better than I even thought they would!

Pesto Peppers

Cut a few peppers in half and take the seeds and ribs out.  Lay flat in a baking/roasting pan.

Put a spoonful of pesto in each pepper half.  I used store bought pesto which works just fine 🙂

Top each pepper with a few pieces of fresh mozzarella…..(Ok, I put a little more than a few pieces).

Put in a 375 degree oven for 45 minutes.

The peppers come out nice and tender and beautifully roasted, bringing out their natural juices and sweet flavor!
