These are really refreshing and tasty!  My Little Gluten Free Girl made these for her 5th Birthday Tea Party and they were a hit 🙂  We made these Tea Sandwiches along with Egg Salad Tea Sandwiches for her 5th Birthday Tea Party with T.C. Bear and oh my gosh what a blast it was!  Happy Birthday to My Little Gluten Free Girl-  I can’t believe she is 5 years old which means 4 years of being Gluten Free- WOW!

Lemon Cucumber Tea Sandwiches

I used one 8 ounce package of cream cheese.  Let it sit out for a bit so it softens and add the juice and zest of half of a lemon, add more to taste if desired depending on how much juice you get from your lemon.  Add a pinch of salt and mix together well.  I think the juice of one whole lemon would be fine, it just depends on how much lemon flavor you want.

My Little Gluten Free Girl used a heart cookie cutter and cut out heart shapes out of gluten free bread for herself.  We also used regular bread for the guests at her party.

I sliced little thin rounds of cucumber and put them on paper towels so they could dry out a little, getting some of the moisture out will help not to make the sandwiches soggy.

Spread a layer of the cream cheese mixture on a piece of bread and put one or two slices of cucumber on top.
