I haven’t had a guest recipe for a while so this guest recipe is from my sister Jill!  She hosted our monthly girls lunch and made this delicious and pretty dish!

Thai Chicken Fettuccine Salad

This is such a pretty dish and really tasty!  I don’t make a lot of Thai food at home so this was a fun treat!   She made it gluten free for My Little Gluten Free Girl which was really sweet of her 🙂

Cook 6 oz. of gluten free fettuccine noodles according to package directions and drain well.

To make the Thai sauce combine 1 cup of picante sauce, 1/4 cup crunchy peanut butter, 2 tablespoons of honey, 2 tablespoons of orange juice, 1 teaspoon of gluten free soy sauce and 1/2 of a teaspoon of ground ginger.  Cook and stir over low heat until blended and smooth.  Reserve 1/4 cup of the sauce and mix the rest of the sauce with the hot fettuccine noodles.

Cook 1 inch pieces of chicken breasts in some olive oil in a large skillet until browned and cooked through which is about 5 minutes or so.  You could totally buy already cooked chicken to just add in.  You could also just leave the chicken out to make it a veggie dish, which is what I would probably do, but the chicken was good too.  Mix the chicken with the 1/4 cup reserved Thai sauce and mix well.

My sister got this really nice purple savoy cabbage to put under the dish for such a fun pop of color!  Line a large platter/serving bowl with the cabbage leaves, if desired.  Arrange the fettuccine mixture over the cabbage and top with the chicken mixture.

Sprinkle with a little dried cilantro, some peanut halves and red bell pepper strips if desired.
