I saw a version of this on a cooking show and wanted to try to make it gluten free and it turned out really yummy 🙂  We all really liked this dish!  The fun part about this dish is that you can add any kind of vegetable you want and it would work!  All of us love tater tots so it was a hit in our house!

Tater Tot Casserole

First, brown a pound of gluten free hamburger until no longer pink.  Add in about a teaspoon of paprika, 2 teaspoons of salt and 1 tablespoon of cumin.  After the meat is brown, add in 2 tablespoons of tomato paste and stir that in for about 4 minutes.

Take the meat out of the pan and set aside.  In the same pan, cook 1 chopped onion and 1 red bell pepper that has been cut into strips.  Cook until soft with 1 teaspoon or so of salt, about 7 minutes.

In a 9 x 13 dish, spread half of the meat on the bottom.  Sprinkle about 1 cup or 3 slices of Havarti cheese on top of the meat.  I found slices of Havarti cheese, if you have shredded cheese it would be about 1 cup.  If you can’t find Havarti cheese you can use whatever kind of cheese you like, mozzarella or provolone would work just fine.

After the cheese layer, spread the rest of the meat on top of the cheese and then add the vegetables.  Add in one more layer of cheese.  Finally, add an entire 32 ounce bag of tater tots on top.  Bake for 30 minutes at 375 degrees.
