I made this dish for my Son’s First Communion Brunch.  I wanted to make sure My Little Gluten Free Girl had something Gluten Free to eat and it was a big hit!  A great dish for brunch!  You can really add anything in it that you want, just like you would an omelet.

Baked Omelet


I decided to just make it a sausage and cheese omelet which really bakes nicely in about 25 minutes.  Cook up one pound of sausage, I used a sage breakfast sausage and just browned it in a skillet until no longer pink.  Set aside.


Beat together 16 eggs, I made a double batch for our brunch which fed about 15 people or so.  You can cut it in half if you don’t need that much.  Beat the eggs with about 1 tablespoon of salt and 1 tablespoon of dried oregano.  Beat in 2/3 cup of heavy whipping cream and add in  1 1/2 cups of shredded cheddar cheese.  Finally, add the cooked sausage into the egg mixture.


Pour into a sprayed 9 x 13 baking dish and sprinkle with another 1/2 cup of shredded cheddar cheese.


Bake at 425 degrees for about 25 minutes.
