May is Celiac Awareness Month so to celebrate we decided to make our favorite combination of flavors in a mini version for lunch!  Now that we have fresh basil in our backyard, this was even better when we added our fresh basil!  YUM!

Mini Caprese Salads


These were really simple but were such a yummy lunch!  Cut a little bit off the bottom of a cherry tomato so the tomato can stand up, then cut the tomato in half.  Sprinkle a pinch of salt over each tomato bottom.  Cut little blocks of fresh mozzarella cheese and put a piece on the bottoms of the tomatoes.  Next tear a little piece of fresh basil and put that on top of the cheese and then put the tops of the tomatoes on.  Easy.  Yummy.  Fresh.


We also drizzled a little bit of our new blueberry balsamic vinegar over the tomatoes.  They are good with your favorite balsamic or without.
