Oh my gosh has summer been flying by!  I haven’t posted a fun recipe since June!  We have been busy with summer 🙂  Since August is just around the corner, I automatically think of my brother in law Mark, who passed away two years ago this August.  He made the most delicious and fresh salsa…. so, in honor of him I have been making his salsa and oh my it is tasty!  He verbally told me his recipe, but I know he didn’t really have a written recipe, he just kind of threw a little of this and a little of that in his salsa.  However, the two main things that made it his salsa was he used both green and black olives and he always used fresh veggies from his big garden!  Miss you Mark!!

Mark’s Garden Olive Salsa


I remember Mark using a little food chopper to make his salsa, so that is what I used to chop up the olives.  I put one 8 oz can of green olives, juice and all, into a mini food chopper along with 2 cans of drained black olives and chopped that up first.


Then, I just washed and roughly chopped up the rest of the veggies.  I used a mini food chopper to do this at first, but found it easier to use a big food processor.  I threw in 3 medium tomatoes, 2 green peppers and 1/2 of an onion along with about 1 tsp. of red wine vinegar and a pinch of salt and pepper.  


Blend it up in the food processor pretty fine, I like to leave it a bit chunky.  Add the chopped up olives to the chopped up veggies and mix them together, or you can just put it all into one big food processor and do it all together.  I just used a mini food chopper because that is what Mark did 🙂
