It’s back to school time, which means back in the kitchen and back to my blog!  I have missed posting on my blog over the summer but we were busy enjoying summer and I just didn’t post much!  But now, I am back!  I am celebrating back to school with a really fun, new dish that I was inspired to make!  My husband and I took a trip up north this summer and I had a dish similar to this, I adjusted it to make it gluten free and My Little Gluten Free Girl loves it!  Happy Back to School!

Back to School Mushroom Dish

This is so easy and so yummy!  I have made it twice this week already!  All you need are mushrooms, goat cheese and eggs!  Our new favorite thing is goat cheese!  I had it on this dish and really enjoyed it, so I introduced it to My Little Gluten Free Girl and she absolutely loves it!  

Just chop up about a pound of mushrooms and put them in a skillet with a little olive oil.  I like to use flavored olive oils, especially with mushrooms because they take on the flavor.  I used a little lemon olive oil and Tuscan herb olive oil and a few pinches of sea salt.  You could just use regular olive oil, make sure to let them brown before you salt them to get that nice golden color which equals flavor!

Put some of the mushrooms on a plate and top with a few crumbles of goat cheese.

While you are cooking the mushrooms, cook up a fried egg.

Top the plate of mushrooms and goat cheese with a fried egg and that’s it!
