This is a fun snack or light lunch that My Little Gluten Free Girl and I made over the summer, so refreshing and light!

Hummus Veggie Wrap


This is full of veggies and the hummus takes the place of any dressing you would need.  You really can put whatever veggies you would like in here.  We went with onions, roasted red peppers, kalamata olives and I wanted to throw in some artichokes but we were out, but those would be good and of course the hummus.

Cut up a few onions in long strips, I love caramelizing onions because it gives such a nice flavor.  Just put the onions in a skillet with some butter and let them get nice and brown.  It will take 20 minutes or so to get them nice and brown.


I used a jar of store bought roasted red peppers, cut those up in long strips and set aside.


Chop up a few kalamata olives and set aside.

I used a gluten free spinach wrap, you can use any kind of wrap you want.  Of course to make it gluten free a corn tortilla or any kind of gluten free wrap would work.  Lay the wrap out and spread your favorite kind of hummus down the middle.  We used roasted red pepper hummus.


Top with the roasted red peppers, caramelized onions and olives.


Now, our new favorite thing is goat cheese, so of course we crumbled some goat cheese over the top.  Not to much because goat cheese is very rich and creamy.


Roll up like a burrito and cut in half to share!  Gluten Free and Yummy 🙂
