Happy New Year!!  This dish was totally something new and creative that I decided to do based on how much I love Manicotti.   Well, it’s hard to find gluten free manicotti shells, so I decided to do it without the pasta completely!  I call this Ham Manicotti and My Little Gluten Free Girl and I loved it 🙂

Ham Manicotti

We basically made the filling of what would be inside of the pasta shell and cooked it without the shell!  It was a hearty meal because of the ham and pepperoni and it was really tasty.

We took a piece of really good gluten free ham and put 3 pieces of pepperoni and one string cheese inside of it and rolled it up with a little sprinkle of oregano and basil.

Put the rolled up pieces of ham in a 9 x 13 baking dish and cover with tomato sauce, I put some tomato sauce on the bottom too.  Sprinkle shredded mozzarella cheese on top, fresh would be good too.  We also threw a few slices of black olives on top  as well 🙂  Mushrooms or onions would be good in here too!

Bake at 350 degrees for about 30 minutes or so until it all heats through and the cheese melts.
