We love Greek flavors and of course we love Eggplant in our house.  So, this was so fun and easy to whip up for a weeknight dinner!  My Little Gluten Free Girl loved it and so did Mommy 🙂

Greek Eggplant Boats


I just took an eggplant, which we like to use to create unique dishes, and cut it in long slices about 1/2 inch thick.


Add some salt and some seasoning, I used a Mediterranean seasoning spice blend but you could just use Oregano, which would be delicious.

Saute in a skillet with some olive oil in it, the eggplant will soak up all of the olive oil so be careful not to use too much.  I used lemon olive oil.  Cook on both sides for about 3 or 4 minutes on low to medium heat.  Take out when finished and lay onto paper towels.


Chop up a cucumber and a tomato and put into a dish.  Add in some feta cheese and a little salt and oregano.  I also stirred in a tablespoon or so of our favorite gluten free greek salad dressing.  Toss it all together and serve on top of the cooked eggplant!
