My Husband really enjoyed this dish!  It really was an easy weeknight gluten free meal to prepare and we all ate it up 🙂

Skillet Chicken Parmesan


My Little Gluten Free Girl and I put the ends of a gluten free bread loaf in a little chopper to make the breadcrumbs for this dish.  We added some shredded parmesan cheese in there and chopped it all up to make the mixture for the breadcrumbs.


We put one egg in a bowl and whisked it up and we put the breadcrumbs in a bowl.  Dip the raw chicken cutlets into the egg and then into the breadcrumbs.  You could use chicken cutlets or chicken tenders, which kids would like, but the chicken cutlets probably work best.  Salt and Pepper a bit on each side before dipping into the egg and breadcrumbs.


Put each piece into a skillet over medium heat with some olive oil.


Cook on each side for about 3- 4 minutes or so until brown and crisp.

Put a fresh piece of Mozzarella cheese on top of each piece and let melt for a few minutes.


Take out of the skillet and serve on a platter.  I offered tomato sauce and pesto to serve on top of the chicken.  Gluten Free and Yummy 🙂
