This dish was so good!!  We love shrimp at our house but I just don’t make it that often, so this was a great way for me to incorporate shrimp into a dish making it so yummy and simple and of course, gluten free!

Shrimp Cobb Salad


This was so fun to create and really yummy to eat 🙂

Just take some of your favorite ingredients and create your delicious Cobb Salad!

I put a bed of spring mix greens on a platter.  I put some grape tomatoes on the end, some chunks of avocado next to those.  I put blue cheese crumbles on the other end and crisp bacon next to that.  In the middle I put the shrimp!



For the shrimp:  I bought the frozen little salad shrimp already cooked, peeled and deveined.  So, I thawed them out in a cold bowl of water for about 15 minutes.  I put some lemon olive oil in a skillet at medium heat.  Salt and pepper the shrimp and I added a little lemon pepper as well.  Cook on each side for about 2-3 minutes until pink but not rubbery!

Put right in the middle of your salad!  Now, for the dressing I used a store bought Lime Vinaigrette dressing and just drizzled it across the entire salad!  Gluten Free and Yummy 🙂
