I had our book club over and I wanted to serve an easy summer dish, so I thought a Panzanella Salad would be perfect!)

 It’s such a fun salad to make and it’s really tasty, easy and satisfying!

Book Club Panzanella Salad

It’s actually a pretty easy salad to make.  I just cut up 1 cucumber in little moon shapes along with a cup full of cherry tomatoes sliced in half.  I used half of a red onion and sliced it up pretty thin.  Put those three vegetables in a bowl and add about 1/2 cup of your favorite Italian dressing.  I decided to make it easy and added in one package of our favorite gluten free croutons, letting the dressing soak in.  You could also make your own gluten free croutons by cutting up some gluten free bread into cubes, drizzle with olive oil and some salt and pepper and bake in the oven until they become crunchy. Sprinkle a nice handful of shredded parmesan cheese and mix in well.  Finish with some fresh, yummy basil on top!

We had a nice spread of food for our book club 🙂
