This is our new Favorite!!  So tasty and so full of such yummy, healthy ingredients 🙂

Quinoa and Chicken Enchilada Casserole

We put our favorite things in here and it turned out so good!  Even my husband had three helpings 🙂

I just bought a Rotisserie chicken from the Supermarket and that made it really easy to add chicken in this and we also put in our favorite Quinoa that comes in a bag!

Along with the chicken and quinoa just add 1/2 cup of black beans, 1/2 cup of canned corn and 1 can of gluten free enchilada sauce.  To all of that, add in 1 can of green chiles along with 1 tablespoon of cumin and salt and pepper to taste.  Mix this up well and add in about 1/2 cup of  shredded cheddar cheese and 1/2 cup of shredded mozzarella cheese and we also added about 1/2 cup of chopped black olives.

Mix well and add in as much or as little fresh cilantro as you like!

Pour into a sprayed 8×8 baking dish and add a pinch or two of the shredded cheese on top, if you like.  Bake at 375 degrees for about 20 minutes.

Add more fresh cilantro on top along with any fixings you would like, such as chopped tomatoes or cubed avocados.  Serve nice and hot!
