I just literally threw these ingredients all together in a skillet and used some gluten free peanut sauce that I was so excited to find in the store and this dish really turned out well –  My husband had two bowls and My Little Gluten Free Girl really enjoyed it as well 🙂  My favorite are the crunchy water chestnuts!

Zucchini Pad Thai


My Little Gluten Free Girl absolutely loves Pad Thai!  I keep trying to make a version at home but it just hasn’t turned out well, until now!  I was so excited to find a bottle of gluten free peanut sauce at the store the other day- it inspired me to try to make Pad Thai at home again and this time it really turned out delicious!

I have been wanting to use more zucchini noodles in dishes, so this was the perfect opportunity to use them for the noodles in my Pad Thai dish- really worked well and the sauce adds a lot of great flavor.


You can really add any vegetables that you like.  We used carrots, snow peas, water chestnuts and zucchini for the noodles.  So I actually bought zucchini at the store that was already cut into noodles, so that was fun to find!  Makes it really easy to use zucchini noodles in this dish!

So, toss in the zucchini noodles in a skillet with a little olive oil.  Add a handful of snow peas and shredded carrots.  I took a can of sliced water chestnuts drained them and put them in a little bowl with gluten free soy sauce to soak for a little bit.  (I use enough soy sauce to cover the water chestnuts in the bowl)  Add those in with the soy sauce to the skillet.

Let all the veggies cook together and add about 2 Tablespoons or so of gluten free peanut sauce.  Add more or less soy sauce or peanut sauce to taste.  Pinch of salt and pepper.

Let that all cook and reduce down for about 5-7 minutes.
