Oh my gosh this was so tasty!!  My Little Gluten Free Girl ate it up!  She had two bowls the night that I made it 😉  A really great salad for dinner or a snack, even my husband ate it up!! YEAH!!

Artichoke Salad

Oh my gosh we all loved this salad!!  We ate it up for dinner, a late night snack and school lunch!

I used a can(because the store didn’t have a jar)of artichokes.  Dump the entire can, juice and all, into a large bowl.  Slice up a few roasted red peppers(from a jar) and put those into the bowl.  I used an entire can of black olives(drained) and an entire can of green olives(I poured in a tiny bit of the juice from the green olives).

I cut about 4 sticks of mozzarella string cheese into cubes and put those in the bowl.  I used a pinch of salt and pepper and a few pinches of dried basil and mixed really well.  I drizzled just a bit of basil olive oil on top and let it all marinade together in the fridge for at least 4 hours!   

Serve cold.  Gluten Free and Yummy 🙂
